Creditors cannot demand information. It is their responsibility to prove that you owe money. They may request you fill in an income and expenditure form - and it might be in your interest to do so if you genuinely can't afford to pay.

Information a creditor can ask for

Sounds like you're being asked for information you don't want to provide. You don't need to tell them anything you don't want to. However, you may want to set out your case for how much you can afford to repay and when by telling them what you're earning and some your expenditure and make them a proposal to repay the debt. If you do, do everything in writing. Also, consider debt management or other debt solutions if you're have trouble paying your debts. Let us know whether this was useful.
